Ingredients

  • 1 cup (100 g) dried shrimp, ground
  • 1 cup (150 g) garlic, thinly sliced
  • 1 cup (150 g) shallots, thinly sliced
  • 2 tbsp (12 g) chili flakes
  • 1/2 cup (120 ml) oil
  • 1 tsp (5 g) shrimp paste (ngapi), optional
  • Salt to taste

Method

  1. Fry the sliced garlic in oil until golden and crisp; remove.
  2. Fry the shallots until golden; remove.
  3. Fry the ground dried shrimp gently until fragrant and dry.
  4. Combine everything with chili flakes and optional ngapi; season.
  5. Cool completely so it crisps.
