What this site is

An informational and editorial companion to a cookbook. It has no accounts, no payments, no submissions and no user content. Using it means reading it.

The recipes are development drafts

No recipe on this site has been kitchen-tested. Quantities, timings and yields are the author’s working text and have not been confirmed by cooking. Treat them as a draft you are reading, not as instructions that have been proven to work.

Cooking from them is entirely at your own discretion. Results will vary with ingredients, equipment, altitude and technique, and nothing here is a guarantee of any particular outcome.

Food safety and allergens

You are responsible for safe food handling, storage and cooking temperatures, and for deciding whether a dish is appropriate for you and the people you cook for.

Allergen and dietary notes describe each recipe as written in this book. They do not describe every version of a dish, and they cannot describe the specific products you buy — fermented seasonings, sauces, pastes and wrappers vary between manufacturers and change over time. If you are avoiding an ingredient, the label on the jar in your hand is the authority, not this site.

You are welcome to read the site, cook from it for yourself, and link to it. Republishing the text or images, in whole or in substantial part, or using them to train or fine-tune a model, requires the author’s written permission.

Dish names, regional traditions and common technique belong to the cultures they come from and are not claimed by this project. What is claimed is the writing.

External services

When the book is published, this site will link to its retail listing. Those services are operated by other companies under their own terms, and this site does not control their availability, pricing or content. No such link exists yet.

The site is a work in progress and is not yet published. Content, structure and these terms may change as the project develops, and pages may be added, revised or removed without notice.

The site is provided as it is. Reasonable care has been taken with the content, and where something has not been verified this site says so rather than implying otherwise — but no warranty is given that it is complete, accurate or fit for any particular purpose.
