Ingredients

  • 1 cup (200 g) palm sugar, chopped
  • 1/2 cup (120 ml) soy sauce
  • 1/2 cup (120 ml) water
  • 1 star anise (optional)
  • 1 slice galangal (optional)

Method

  1. Melt the palm sugar with the water over low heat until dissolved.
  2. Add soy sauce and optional aromatics.
  3. Simmer gently 10–15 minutes until syrupy and coating.
  4. Cool — it thickens further; strain out aromatics.
