- How it is used
- The primary salting agent — in dipping sauces, marinades, soups, stir-fries and dressings. Often finished raw in dipping sauces, cooked into braises.
- How to select
- Look for first-press (nhĩ / nước mắm nhĩ) sauces of anchovy and salt only; amber-to-mahogany color; protein/nitrogen rating on premium bottles indicates strength.
- Storage
- Cool and dark; keeps for years. Color darkens over time — normal. Refrigeration slows change.
- Substitutions
- Thin soy sauce plus a little salt for a vegetarian version; mushroom seasoning sauce for depth (flavor differs).
- Allergens
- Fish. Some blends contain added sugar; check labels for pescatarian/allergy needs.
